Now do you put California Pizza Kitchen down as a pizza place or do you call it a restaurant?  CPK has made a business out of providing specialty pizzas and meals in a casual dining restaurant atmosphere.

The first location of a California Pizza Kitchen was in Beverly Hills, CA.  This location was started up by former Federal prosecutors Rick Rosenfield and Larry Flax.

There are now more than 250 CPK locations throughout the United States and 11 other countries.

California Pizza Kitchen is known for their unconventional pizzas.  They use different toppings to create unique recipes like BLT pizza, “The Original BBQ Chicken Pizza”, Jamaican Jerk Chicken Pizza, and Thai Chicken Pizza.

The menu at a CPK doesn’t stand just with pizzas. There is also a wide variety of pastas, salads, soups, sandwiches, and desserts.  Some of the appetizers are raved about by customers like the Avocado Club Egg Rolls or the Lettuce Wraps.

What is a California style pizza?

California had to come out and create their own style of pizza to go against New York style pizza and Chicago style pizza.  California pizza takes on the New York Italian thin crust approach while using toppings and cooking styles of Italian cuisine.

California style pizza is a fairly new style of cooking pizzas.  This originated in 1980 by its creators, Ed LaDou and Alice Waters’ chefs.  LaDou was a pizza chef at Spectrum Foods’ Prego Restaurant in San Francisco and Waters was working at Chez Panisse cafe in Berkeley, CA.

LaDou used to serve Wolfgang Puck at the restaurant in San Francisco where he was given unique instructions for off menu items.  Puck was so impressed with LaDou’s ability to create pizzas with the ingredients requested that he invited LaDou to be the head pizza chef at his restaurant, Spago, the restaurant that made Puck famous.

CPK Groceries

California Pizza Kitchen licensed their company name to Kraft Foods in 2000 to sell CPK frozen pizzas in grocery stores.  Nestle purchased all of Kraft’s pizza lines in 2010, so now CPK frozen pizzas are owned by Nestle.
