What is a California style pizza?
California had to come out and create their own style of pizza to go against New York style pizza and Chicago style pizza. California pizza takes on the New York Italian thin crust approach while using toppings and cooking styles of Italian cuisine.
California style pizza is a fairly new style of cooking pizzas. This originated in 1980 by its creators, Ed LaDou and Alice Waters’ chefs. LaDou was a pizza chef at Spectrum Foods’ Prego Restaurant in San Francisco and Waters was working at Chez Panisse cafe in Berkeley, CA.
LaDou used to serve Wolfgang Puck at the restaurant in San Francisco where he was given unique instructions for off menu items. Puck was so impressed with LaDou’s ability to create pizzas with the ingredients requested that he invited LaDou to be the head pizza chef at his restaurant, Spago, the restaurant that made Puck famous.
California Pizza Kitchen licensed their company name to Kraft Foods in 2000 to sell CPK frozen pizzas in grocery stores. Nestle purchased all of Kraft’s pizza lines in 2010, so now CPK frozen pizzas are owned by Nestle.
